Khoai môn mua về rửa sạch, cạo vỏ và cắt thành từng miếng dày 1cm. Đun nóng 50ml dầu ăn trong chảo rồi cho khoai môn vào đảo đều đến khi chín thì tắt bếp, đặt sang một bên.
Trong một cái chảo khác, thêm 30ml dầu ăn vào đun nóng. Sau đó lần lượt cho gừng, tỏi và phần đầu trắng của hành lá vào phi thơm. Tăng lửa to và nhanh tay cho thịt vịt vào xào khoảng 2 phút.
